So,
tonight Becca and I had organic brown rice spiral pasta with Rao's sauce, sun dried tomato chicken sausage and broccoli. Now, although none of this was really homemade... I am still going to write about it because 1-it was delicious and 2-I have not written in awhile.
The Ingredients:
1 Jar Rao's Marinara Sauce (Rao's Homemade Marinara Sauces-24oz)
1 Box Organic Brown Rice Pasta (Lundberg Organic Brown Rice Rotini Pasta, Gluten Free, 10 oz (284 g))
1 Package Sun Dried Tomato & Basil Chicken Sausages ( Can't remember the brand.. but I bought them prepackaged from Whole Foods)
Broccoli
First, get three pots heating, 2 filled half way with water and in the other dump the jar of sauce in, turn it on low (covered) and let it go while you get everything else ready. Next, add the chicken sausages to one of the water pots. Put it on medium high and let them boil. Finally.. boil the last pot, once boiling add pasta and cook by following the directions on the box.
While the three pots are going, turn your oven onto about 375. Get out a cookie sheet, cover it with aluminum foil and put a little olive oil on it. Place your broccoli onto the cookie sheet in pieces, drizzle with a little more olive oil. Cook for about 12 minutes.. just enough so they are slightly cooked, NOT MUSHIE! It should still be crunchy when you eat it! When the broccoli is done, remove it from the oven. Sprinkle with a little pepper and a very small amount of sea salt if desired. This is ready to eat.
Back to the pots on the stove....After the pasta water is boiled and the pasta is cooked, drain and rinse pasta. Turn off the pasta sauce and turn off the chicken sausages. Combine everything how you like and enjoy! I place the pasta, sausage and broccoli separate on the plate, whereas Becca mixed everything together.. it is up to you, whatever you enjoy most.

I must note--I typically do not cook my sausages by boiling them, this is just how I cooked them tonight because I did not feel like watching as closely while cooking. I usually cook them in a skillet with a little olive oil. Either way is good...I find the skillet makes them better but sometimes boiling them is just easy.
By cooking the whole box of pasta and whole pack of chicken sausages tonight... there was plenty leftover for me and Becca to have for lunch tomorrow! Yum!
